Gluten-Free Foodie

My love of polenta will never die

Fried polenta sautéd with cherry tomatoes and basil - hello dinner :)

Parents ask: are you eating okay? I think this is better than okay :) sausage, peppers and onions with done dijion. So easy and fast to make it’s becoming a bit of a staple. Who says you need a bun to enjoy this classic combo?

This one I made this morning, and ate it before I realized I should have taken a picture :/

Came up with the idea this morning, also after realizing that I had burgers left in the fridge from the night before. 

Make your omelette mix:

2 eggs

1/4 cup milk

salt, pepper, onion powder and a little bit of Old Bay

Cook in a teflon frying pan (you want to make sure it doesn’t stick)

On one half (while it’s cooking) sprinkle OODLES of cheese, and layer with cubed hamburger. When the other side looks as though it is almost cooked through, flip it over the side filled with awesome. Let cook for a bit, flip it, plate it and cover it with ketchup, and you’re good to serve. 

Writing a food blog doesn’t work quite so well when you cook as I do. The ways that I approaching cooking is that you use whatever’s in the fridge and you eye-ball the amounts. 

Today my non-glutard housemate Courtney made mac’n’cheese, and it got but me and my sister craving it something terrible. No box mix in the house, so I decided to make it from scratch. Above is the result - not half bad. :)

I made some gluten-free pasta (following the package) and as it boiled I took:

3 triangles of Laughing Cow Garlic and Herb Spreadable Cheese wedges,

2+ inches of cheddar cheese,

a spoon full of goat cheese,

milk, butter, pepper, salt and a little cayenne and mixed it all in my Magic Bullet.

(really that thing IS magical) 

(2nd note: keep the mixture on the soupier side)

When the pasta was a minute or 2 short of being done, I strained the pasta, mixed it with the cheese and put it in individual crocks, covered them with gluten-free italian bread crumbs (I used Gillian’s) and a few pads of butter and baked them until the top began to brown. 

the final result = delicious.

I’d highly recommend it

4th of July weekend is the weekend of cook-outs and burgers, which -for those of you who know me- is one of my greatest loves. Udi’s recently came out with gluten-free burger buns, and my hopes were raised for a gluten-free 4th burger, bun and all. Sadly, they sold out as soon as they were in stock. But several days before the 4th, my sister and I chanced into Red Robin, and discovered an awesome substitute - the lettuce bun! It worked so well, that I carried a bag of lettuce cups with me to every bbq I went to. And I would vote, it was totally worth it. :)

BAH! dear god I want these so bad - I don’t think anyone will truly understand how much I LOVE corn dogs - in fact I don’t really understand it either…

Strawberry Salad - Chopped lettuce, chopped portobellos, chopped grilled chicken (with a lemon, pepper, garlic glaze), chopped red onion and strawberries with a blush vinaigrette. :) Super easy, fast and delicious- especially on a warm day
